How does Steve Jobs do video mirroring on his Keynotes?

Question by ek259: How does Steve Jobs do video mirroring on his Keynotes?
When Steve Jobs demos new things like iPod Touch, iPhone, iPad, and so on, how does he do video mirroring? (video mirroring is projecting what is on the screen of the iDevice to an external monitor like a Tv, computer, or projector)

One more component to this question, how does he do that on his Keynote files?

Help to either or each of these concerns would be appreciated. Don't tell me something that requires jail-breaking, either. Thanks in advance!
-It does not have to be Exactly like Steve Jobs.
-It does not have to be on Keynote
-I KNOW how to mirror with the iPad
-I just want to know if a non-jailbreaking mirror exists for iPhone/iPod Touch

Despite the fact that if you want to use it with out a cable, properly a Jailbreak is required.
