I have downloaded a couple of quite excellent apps from itunes but they turned out to be only iPad compatible.. Is there any way I can make them function on my iPhone???

There is no existing way to convert an iPad app to work on the iPhone that I'm conscious of. The resolution on an iPad is drastically bigger and apps particularly written for it use that resolution.
You can call Apple and let them know you produced a mistake, and it's likely they will refund your funds. They are usually fairly good about items like this, or at least they had been when I purchased the wrong song on accident a couple years ago.
